Waterkloof

Het wijnhuis Waterkloof, uit Stellenbosch, is de maker van deze Peacock Ridge. Het wijnhuis ligt slechts op enkele kilometers van de Atlantische oceaan en de bodem is vulkanisch. Dat oprichter Paul Boutinot biologisch werkt staat als een paal boven water. Hij is zeer gericht op het milieu en gaat steeds verder in ook biodynamisch werken. Zo werken ze bijvoorbeeld met paarden in de wijngaard.
